Cooking and Adulting: Vegetable Soup

We teamed up with our friends at Imperfect for some more basic adulting: making soup. We made a basic vegetable soup while talking about our go-to cold weather meals, tips for cutting onions without crying, and soup for breakfast.

How to Make Vegetable Soup

The great thing about vegetable soup is that it can work with whatever vegetables you have on hand and can be customized based on what you like. We used produce from our Imperfect produce box to make our super easy soup:

Ingredients

  • Onion
  • Garlic
  • Carrot
  • Bell Pepper
  • Potato
  • Olive Oil
  • Vegetable Broth
  • Salt and Pepper

Directions

  1. Chop veggies
  2. Heat oil in a pot
  3. Add onion and garlic to pot
  4. Cook for 2 minutes
  5. Add the rest of your veggies
  6. Cook for 6 minutes
  7. Add vegetable stock
  8. Cook until veggies are the consistency you like!

If you're making a potato soup, use the immersion blender to blend your soup after it's done cooking!

If you're making a chicken noodle soup, add noodles instead of the potato and add some cooked chicken at the end.

You Said It

Thanks to everyone who participated! We loved receiving your questions and hearing your stories. Here are some favorites:

1. There's Nothing Cooler than a Chill Onion

How do you cut an onion without crying? Chilling the onion, cutting it underwater, and wearing goggles are all tips that were shared. This list has some more.

2. I Make a Delicious Broccoli Gruyere

Broccoli Gruyere (with toasted sourdough!), Lentil, Minestrone, and Chili were some of the soups we like to make when it gets cold. We'll add our vegetable soup to that list because it was so easy to make and so delicious!

3. The Skins Stay

You avoid peeling potatoes as much as possible and so do we. Keeping the potato skin is a great way to limit food waste and get more nutrients. Here's a recipe for cooking potato skins when peeling is necessary.

THE GOOD STUFF

Here are a few of the recipes, products, and food waste tips we shared while cooking!

HOMEMADE VEGETABLE STOCK

While we used store bought vegetable broth, vegetable stock is easy to make and a great way to use vegetables and herbs that you have on hand. Here's how to make your own vegetable stock.

IMMERSION BLENDER

We loved using the immersion blender to make creamy potato soup from our vegetable soup base. Making soup isn't the only time an immersion blender is handy. Here are 13 Reasons Your Immersion Blender Will Become Your New Best Friend.
